Jambalaya
A healthy take on the traditional dish using cauliflower rice instead of regular rice. All the authentic flavors with way fewer carbs — and it’s a one-pot meal!

Ingredients
Proteins:
- Andouille sausage (sliced thinly): 1 lb
- Shrimp (large, peeled and deveined, thawed if frozen): 1 lb
Vegetables:
- Cauliflower rice (fresh or frozen): 2 lbs / 2 frozen bags
- Bell peppers (diced): 2-3 large
- Onion (diced): 1/2-1 large
- Celery (diced): 1/2 cup
- Green onions (optional, for garnish)
- Garlic (minced): 6 cloves
Liquids & Seasonings:
- Diced tomatoes: 1 can (14.5 oz)
- Chicken broth: 1/4 cup
- Olive oil: 2 Tbsp
- Salt and pepper
- Cajun seasoning: 2 Tbsp
Homemade Cajun Seasoning (if making your own):
- Paprika: 2 Tbsp
- Garlic powder: 2 Tbsp
- Salt: 1 Tbsp
- Oregano: 2 tsp
- Thyme: 2 tsp
- Onion powder: 2 tsp
- Cayenne pepper: 2 tsp
- Red pepper flakes: 1 tsp
- Coriander (ground): 1 tsp
Instructions
- Prepare and thaw the shrimp, wash vegetables, dice bell peppers, onion, and celery, mince garlic, and slice the sausage.
- Make the Cajun seasoning by mixing together paprika, garlic powder, salt, oregano, thyme, onion powder, cayenne pepper, red pepper flakes, and coriander in a small dish.
- Heat oil in a large stew pot over medium heat. Add bell peppers, onion, and celery. Sauté for 5-8 minutes until softened.
- Add the sliced sausage and sauté for about 5 minutes until browned. Make a well in the center, add minced garlic, let it sizzle about 30 seconds until fragrant, then stir in.
- Add cauliflower rice, diced tomatoes, chicken broth, and Cajun seasoning. Stir together, then add the shrimp.
- Increase heat to high to bring to a simmer, then continue to simmer uncovered, stirring occasionally, until cauliflower is tender, shrimp is cooked through, and liquid is reduced — approximately 5-7 minutes.
- Taste test and add salt or more Cajun seasoning if desired.
- Garnish with green onions and/or parsley if desired. Enjoy!
