Italian Sub Salad

All the flavors of an Italian sub without the bread. The kalamata olive brine dressing is the secret weapon here.

Ingredients

For the Salad:

  • Romaine lettuce (chopped): 1 cup
  • Cucumber (quartered): 1/2 cup
  • Tomato (diced): 1/8 cup
  • Parmesan cheese (shredded): 1/4 cup
  • Salami: 3 oz
  • Bacon bits: 1/4 cup
  • Kalamata olives (quartered): 6 olives

For the Dressing:

  • Olive oil: 1 Tbsp
  • Kalamata olive brine: 1 Tbsp
  • Garlic powder: 1/2 tsp
  • Dried oregano: 1/2 tsp
  • Dried basil: 1/2 tsp
  • Salt and pepper

Instructions

  1. Cook bacon (2-3 slices) if not using ready-made bacon bits.
  2. Prep vegetables — wash lettuce, tomato, cucumbers. Chop lettuce (1 cup), dice tomato (1/8 cup), quarter olives (6), cut salami (3 oz).
  3. Make the dressing by combining olive oil, kalamata brine, garlic powder, oregano, basil, salt and pepper in a jar. Shake well and taste-test.
  4. Assemble the salad, drizzle with dressing, and enjoy!
